This recipe is from one of Swathi's favorite cookbooks: Quick & Easy Paleo Comfort Foods by Julie and Charles Mayfield.
Swathi’s Notes:
- You can use Almond Meal or Almond Flour. While these are often interchangeable, almond meal typically refers to ground almonds with the skins still on (will be browner in color), while almond flour is blanched and ground after the skins are removed. Also, almond meal is often coarser in texture than almond flour. Because of the texture difference, you will often get a lighter texture if you use the lighter almond flour and heavier texture if you use almond meal. Which is better is personal preference!
- A hint of sweetness – Feel free to use less honey or maple syrup in your recipe, you don’t have to put in the full 2 tablespoons. Swathi tends to use honey in the spring and maple syrup in the fall for variety and a seasonal feel. Of course, always get local organic honey or organic maple syrup.
